The traditional food that i found was the mooncake. The ingredients to make mooncake are: 1 can of lotus seed paste, 1/4 cup of almond flakes, 1/4 cup of raisins, 1 egg yolk, 4 cups of all purpose flour, 3 tablespoons of baking powder, 1/2 teaspoon of salt, 1 cup of sugar, 1 teaspoon of alkaline water, 1/2 cup of shortening, 1/2 cup of milk powder and 3 eggs.
The recipe :
In a bowl, combine the almond flakes and raisins with the lotus seed paste. Set aside.
Making the dough: In a medium-sized bowl, sift the flour, milk powder, baking powder and salt. Use an electric mixer, beat the eggs on medium speed till you get a light and fluffy texture. Slowly add in sugar and beat till you get a slightly thicker mixture. Add in melted shortening and mix extra 5 mins. Add in alkaline water. Use a spatula, fold in the dry ingredients. You will get a rough doughy like mixture. Pour out the dough on a lightly floured board. Knead it till you get a smooth consistency. Divide the dough into 1/2, roll both 1/2 into a log. Cut into 12 equal pieces.
Shaping the mooncake: Lightly grease the mooncake mould and dust inside with flour. Take a piece of dough and roll it into a ball. Roll it out on the floured board. Place 1 tablespoon of filling onto the centre of the dough. Fold in sides to close the fillings. Place the mooncake dough to the mould. Flatten the dough. Strike the counter top with the mould. Repeat till you have 12 pieces. Brush the top with egg yolk. Place them onto an ungreased baking tray. Preheat the oven to medium. Transfer on a cooling rack.
